Challenge: Getting more information on the health-promoting effects of
rye, and improving the flavour of rye products to respond to consumers'
Solution: VTT carried out research on the structure of rye grain, defining in which part of the grain the health-enhancing compounds and the flavour components are located.
Health-promoting effects and mild taste can now be combined in rye products by choosing the right parts of the grain
VTT's rye research has enabled the development of new innovative products such as Fazer Rye Fibre® by Fazer Mill & Mixes, a key ingredient behind the award-winning Fazer's Rye Toast.
Through extensive long-term network co-operation it has been possible to attest the health-enhancing impact of whole-grain rye, gaining international awareness for the results.
